Hobo Stew strikes again! After making the driest, crunchiest batch of rice and beans, I had to make things right. Key ingredient for moisture: two tablespoons of tomato sauce! The usual suspects followed: cubes of tofu, zucchini and carrots. Simmered while I picked N up at Bart. Enjoyed with the Knork. Remember when bhutanese red rice ruled our lives? I do.
